Muffins with oats and berries are a wholesome and delicious option, perfect for breakfast or a snack. Here’s a recipe that combines the heartiness of oats with the sweetness of fresh or frozen berries:
Oat and Berry Muffins
Ingredients:
- 1 cup old-fashioned rolled oats
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (optional)
- 1/2 cup milk (or any milk substitute)
- 1/4 cup vegetable oil (or melted coconut oil)
- 1 large egg
- 1 tsp vanilla extract
- 1 cup mixed berries (fresh or frozen; if using frozen, do not thaw)
Instructions:

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

In a large bowl, combine the oats, flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.

In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
