Oat and Berry Muffins

Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 cup milk (or any milk substitute)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup mixed berries (fresh or frozen; if using frozen, do not thaw)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

  2. In a large bowl, combine the oats, flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.

  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.

  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
